Pasta with Fresh Basil and Tomatoes

This dish is a usually a great summer treat – at Cape Abilities Farm, fresh local tomatoes and basil are available begininning in May. You don’t have to wait until August to enjoy this recipe.

Ingredients:

1/2 cup of fresh basil, chopped
1/2 cup of olive oil, extra virgin
1 large clove of garlic, mashed
1 pound of tomatoes
1 pound of pasta, shells – or your favorite
Fresh ground peper and salt to taste

Directions

Bring five quarts of water to boil and put in pasta. Chop tomatoes into small pieces. Place them in a mixing bowl with garlic, basil, and oil. When pasta is cooked add to mixing bowl and toss ingedients. Let stand for a half hour. Serves 6-8.
