Zucchini Bread

There are few things in the world more comforting than zucchini bread. Here’s a nice recipe.

Ingredients

3 cups of flour
1 tsp of salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups sugar
2 cups grated zucchini
3 tsp vanilla extract
1 cup walnuts

Directions

Preheat oven to 325 degrees. Grease and flour two 4-8 inch pans.

Sift salt, flour, baking soda, baking powder and cinnamon together.

Beat eggs, oil, sugar and vanilla together, then add sifted mixture and beat well. Stir in zucchini and nuts and place in pans.

Bake 40-60 minutes. Cool in pan on rack for 20 minutes. Then remove from pan and completely cool.
